If you haven't printed this high value .50/1 Old El Paso coupon yet at Coupons.com, head over HERE to snag it before it disappears!  The seasoning packets are .78 each at Walmart, so just .28 after coupon!  Here is my recipe for a great tasting Taco Soup that is around $1 per serving!!  This is one of the quickest meals you can make!

Karen's Taco Soup:

Ingredients:

1 lb. ground meat
1/2 small onion, diced
1 pkg Taco seasoning (printable coupon HERE)
1 can Black Beans, drained & rinsed ($1/5 Goya beans)
1 can Kidney Beans, drained & rinsed ($1/4 Goya Low Sodium beans)
1 can Ranch Style Beans
1 can Rotel (or equivalent) tomatoes (.75/3 Red Gold tomatoes)
1 can diced tomatoes (.75/3 Red Gold tomatoes)
1 can whole kernel corn ($1/4 Libby's Canned Vegetables, exp. 10/31/12 (RP 08/26/12))
1 sm can tomato sauce

Directions:

Brown ground beef in the bottom of a stock pot with the onion.  Add the taco seasoning and stir until meat is coated.  Add all other ingredients and heat through.  Do not drain any of the other canned items except the Black & Kidney beans.  If you find this is too thick for you, add a small amount of beef stock until you reach your desired consistency.  Serve with shredded cheddar cheese, crushed tortilla chips or a dollop of sour cream (or all of the above).  Serves 6-8.
